Brand, finish and feature lists come later. These three published figures decide first whether a machine can do your work at all.
The chamber. Whatever you seal has to sit inside the chamber with the lid closed, so the usable width, depth and height a maker publishes are the hard limit on your largest package — bone-in cuts and jars need height, wide flat packs need floor area.
The seal bar. A pouch seals across its full width only if it is narrower than the seal bar, and where the chamber is narrower than the bar, the chamber sets the limit instead. Buy pouches for the machine, not the other way round.
The pump. An oil pump needs its oil changed on the schedule in its manual; a dry pump needs no oil at all. Where a maker does not say which it is, that is the first question to ask before ordering.
How to size a chamber sealer before it arrives
Use a paper-template method to check chamber, pouch, lid, portion, counter, and service clearance before choosing a model.

Chamber and edge vacuum sealers compared on published seal-bar, chamber, film and pressure specs — including where the manufacturers' own documents disagree.

Choose a chamber pouch by mouth width, length, food height, material, thickness, and clean seal clearance—not dimensions alone.
